AIP Paleo Beef Neck Bone Noodle Soup Recipe

So, they tell me spring is just around the corner.  As I look out my window at the snow piles, I know I still have lots of time to enjoy a nice big bowl of Beef Neck Bone Noodle Soup.

I’d be lying if I said the pics on Instagram, of people enjoying warmer weather, didn’t make me jealous.  Here in Illinois, we’re lucky if we get three whole months of great, warm weather.  But, I’m about to get time away from this arctic nightmare.  I’m going to Austin, Texas and New Orleans, Louisiana, next month.  Woo hoo!  Yep, I’m making a break for it!

However, in the mean while, I’ll enjoy my Beef Neck Bone Noodle Soup, dreaming of my travels.  This fantastic, healing soup uses beef neck bones to create that extra gelatin we all need.  It’s also pretty cheap to buy beef neck bones.  With the price of beef right now, our beef eating has gone way down.  I mean, seriously, $20 for a freakin’ steak.  Nope!

Instead of an expensive steak, I created this healthy, filling recipe to feed your family and yourself, affordably.  I also added yam noodles.  If you’ve never tried yam noodles before, they’re fantastic.  They’re totally AIP compliant, too.  You could also use zoodles or spaghetti squash, if you don’t have yam noodles.  Enjoy!

AIP Paleo Beef Neck Bone Noodle Soup Recipe

Prep Time: 10 minutes

Cook Time: 50 minutes

Total Time: 1 hour

Yield: 6 to 8 servings

AIP Paleo Beef Neck Bone Noodle Soup Recipe

This healthy, gelatin-rich soup will keep you warm and nourish you while you wait for Spring to hit!


  • 1 1/2 pounds beef neck bones
  • 2 carrots, sliced
  • 2 tablespoons coconut aminos
  • 1 tablespoon fish sauce
  • 3 cloves garlic
  • 1 cup sliced mushrooms
  • filtered water, to cover bones
  • 1 8 ounce bag yam noodles, drained and rinsed
  • salt, to taste
  • 1/4 cup chopped fresh cilantro, garnish


  1. Instant Pot
  2. Place first 6 ingredients into instant pot.
  3. Cover with filtered water.
  4. Close lid.
  5. Set to cook on Soup setting for 40 minutes on high pressure.
  6. Once time is complete, turn off Instant Pot.
  7. Allow pressure to release naturally for 10 minutes.
  8. Open lid.
  9. Place yam noodles into soup.
  10. Stir.
  11. Add salt, to taste.
  12. Serve with fresh cilantro.
  13. Slow Cooker
  14. Place first 6 ingredients into slow cooker.
  15. Cover with filtered water.
  16. Cover.
  17. Set to cook on low for 6 hours.
  18. Turn off slow cooker.
  19. Pour in yam noodles.
  20. Stir.
  21. Add salt, to taste.
  22. Serve with fresh cilantro.


Slow Cooker Cook Time: 6 hours
