Well, my week guest hosting the Autoimmune Paleo Instagram page is over. I had a lot of fun; but it was very time consuming. While I was guest hosting, I posted a photo of my Baked Apples with Maple Cinnamon Ice Cream. Followers went nuts over it, and asked me to post the recipe. This is something I’ve made for my hubby and myself for a while; so, I never thought anyone would want it as a recipe. Sometimes, we think the simple dishes we create are not recipe worthy. This has given me a whole new perspective on posting recipes. I will now include simple recipes in my postings. Plus, this is a treat recipe, which I hardly ever post. It’s a win-win!

This yummy treat uses just a few ingredients and is easy peasy to make! It's a refreshing, yet comforting treat!
Ingredients
- Baked Apples
- 2 apples, any variety, sliced and peeled
- 1/4 cup filtered water
- 1 teaspoon vanilla
- 1/2 teaspoon cinnamon
- 1 tablespoon coconut oil, melted
- 1 teaspoon arrowroot starch
- Ice Cream
- 1 frozen banana, cut in half (I freeze mine in halves to make it easier)
- 1/4 cup full fat coconut milk
- 2 tablespoons maple syrup
- dash cinnamon
Instructions
- Preheat oven to 400 °.
- Place apples in a 8”X8” baking dish.
- Add water and vanilla.
- Sprinkle on cinnamon.
- Drizzle on coconut oil.
- Stir.
- Place in oven and cook until apples are fork tender, about 20 to 30 minutes.
- Remove from oven.
- Sprinkle on arrowroot starch.
- Stir well until thickened.
- As apples are cooking, place frozen banana in high powered blender to thaw a little.
- Once apples have cooked, add coconut milk, maple syrup and cinnamon to blender.
- Use your blender’s setting for frozen fruit (mine has an ice crush setting I use), and process until you have an ice cream consistency, about 30 seconds.
- If your ice cream is too thick, just add a little more coconut milk.
- Serve ice cream over baked apples.

Utensils and appliances needed:
oven or toaster oven 8"X8" baking dish high powered blender
