AIP Instant Pot Blackberry Balsamic Chicken Recipe

The other day, while menu planning for the week, I decided to make my Strawberry Balsamic Chicken as part of my menu.  Later, at the grocery store, I ran across some beautiful blackberries. It occurred to me that I could use these blackberries in place of strawberries, when making my chicken dish.  That was the beginning of my AIP Instant Pot Blackberry Balsamic Chicken recipe.

So, you may be asking why not just tell people to replace the strawberries with blackberries? Well, because that would be too easy.  When I pulled up the original recipe, it was actually cooked in a cast iron skillet.  But, I wanted to cook this dish in the Instant Pot.  What I did was create an entirely new recipe.  Not only have I changed the method of cooking; but, I’ve also changed many of the ingredients and amounts.  This AIP Instant Pot Blackberry Balsamic Chicken recipe is all new!

Prep Time: 15 minutes

Cook Time: 45 minutes

Total Time: 1 hour

Yield: 6 servings

AIP Instant Pot Blackberry Balsamic Chicken Recipe

Ingredients

Instructions

  1. Place all ingredients, except arrowroot flour, into Instant Pot.
  2. Close lid.
  3. Press “Poultry” button.
  4. When done cooking, press “Warm/Cancel”.
  5. Allow to release pressure naturally fro 10 minutes.
  6. Carefully open lid.
  7. Remove chicken pieces from Instant Pot, and set aside.
  8. Pour blackberry sauce through mesh strainer, into medium bowl.
  9. Stir and mash blackberries to strain out seeds.
  10. Pour strained sauce back into Instant Pot.
  11. Press “Saute” button, and whisk arrowroot flour into sauce.
  12. Cook until sauce thickens, about 10 minutes.
  13. Add chicken back into sauce and warm through for 5 minutes.
  14. Press “Warm/Cancel” button.
  15. Serve chicken with sauce ladled on top.

I really think you’re going to love this recipe.  It can be cooked with either chicken breasts or thighs.  I’m pretty sure it would work just as well with legs or wings, too!  You’ll want to be sure to add a little bowl of extra sauce for dipping.  I even used the sauce as dressing for my salad a few days later.  It’s really that good!
