It’s finally getting warmer, here in Illinois. Now that Spring has sprung, I’m looking forward to all the wonderful produce coming my way. I just signed up for the locally grown produce box, delivered by Door To Door Organics Chicago. I enjoyed it so much last year. This week’s box of goodies provided everything I needed to create this tasty AIP Crispy Pear-Beet-Cucumber Salad.

This refreshing salad is the perfect side for those warmer Spring days. It’ll give you a little crunch and a burst of healthy flavors. Enjoy!
Ingredients
- 1 pear, sliced into strips
- 1 cucumber, sliced into strips
- 1 beet, sliced into strips
- 2 tablespoons balsamic vinegar
- 2 tablespoons extra virgin olive oil
- 1/4 cup fresh chopped cilantro leaves
- 1/4 teaspoon salt
Instructions
- Place pear, cucumber and beet into a large bowl.
- Pour in balsamic vinegar and extra virgin olive oil.
- Toss well.
- Add cilantro and salt.
- Lightly toss.
- Serve.
I highly recommend using Kasandrinos Extra Virgin Olive Oil when making this AIP Crispy Pear-Beet-Cucumber Salad. The flavor of their oil is exceptional. If you’ve never tried their EVOO, you should. There’s a reason why so many of us paleo bloggers use it!
Hopefully, you’re all enjoying the warmth. After the brutal winter we had, I know I’m loving the heat. The winter months are so hard on my health. It seems the bitter cold makes all of my autoimmune symptoms worse. Since the warmer weather moved in, my joint pain has improved, my rashes have started to disappear, and my overall mood has been cheerier. Does this happen to any of you? Have your autoimmune symptoms improved since Spring started? I’d love to know.
